Rustique sandwich with grilled vegetables and feta

Instructions

1. Cook the yellow peas in broth or water to make them tender but not too mushy

1. Blend the peas to a smooth purée with a food processor or blender. Add some extra virgin olive oil and water if needed. You may also add black garlic and turmeric. Remember that the mix will become thicker as it cools

1. Spread the yellow pea mix on the bottom half of the bread

1. Distribute the spinach leaves evenly above

1. Add the grilled vegetables and feta cheese

1. Top with the parsley
